How to Make Delicious Egusi Soup Using Zinma’s Ground Egusi

Here’s a simple guide to making classic Nigerian egusi soup using our finely ground, premium-quality egusi.

What You’ll Need:

1 cup of Zinma’s Ground Egusi

500g assorted meats (beef, goat meat, tripe, or any of your favourites)

1 cup stockfish and/or dried fish (optional, for extra flavour)

2 cooking spoons Zinma's palm oil

2 tablespoons ground crayfish

1 teaspoon ground pepper (adjust to taste)

2 seasoning cubes (or to taste)

Salt to taste

1 bunch ugu (fluted pumpkin leaves) or spinach, shredded

1 small onion, chopped

2 cups meat stock (from boiling your meat)

Water (as needed)

 

Method:

Step 1: Prepare Your Ingredients

Season your meats with salt, seasoning cubes, and onions. Add a little water and cook until tender. Set aside the stock.

Wash your stockfish and dried fish properly and soak in hot water to soften if needed.

Step 2: Fry the Egusi

In a clean pot, heat the palm oil on medium heat.

Add the chopped onions and fry until translucent.

Mix Zinma’s Ground Egusi with a little water to form a thick paste.

Scoop spoonfuls of the egusi paste into the hot oil and allow it to fry gently. Do not stir too much — let the egusi chunks firm up slightly. This creates that signature “lumpy” texture!

Step 3: Build the Flavour

Once the egusi is slightly fried, add the meat stock gradually.

Stir gently and allow the egusi to cook properly. You can add a little more water if it becomes too thick.

Add your cooked meats, stockfish, and dried fish.

Stir in the crayfish and ground pepper.

Taste and adjust the seasoning with more salt or seasoning cubes as needed.

Step 4: Add the Greens

After about 10 minutes of simmering, add your shredded vegetables.

Stir well and allow to cook for another 5 minutes so the vegetables stay fresh and vibrant.

Step 5: Serve and Enjoy

Your delicious Zinma’s egusi soup is ready! Serve hot with pounded yam, eba, fufu, or rice — whichever you love best.

 

Bonus Tip:

For an extra rich flavour, blend a few fresh peppers (like scotch bonnet) and a little tomato with your onions before frying. It gives the egusi an added layer of deliciousness that will have everyone asking for seconds!
